This "pet nat" or sparkling is 100% Négrette. It is harvest a bit before ripeness, which give it a nice acidity and low alcohol percentage.


Grapes are directly pressed, and are put in tank without any SO2, then lightly clarified.
The fermentation is natural.
Before the end of fermentation, when it stays 20 grammes of sugar, the wine is temperature lowered, and lightly filtered to calm the yeast action. It is bottled right after and it is during winter that the fermentation start again in bottle.
This is the ancestrale way, the most natural possible.


This wine is ideal for aperitiv or dessert, thanks to his low alcohol percentage: 9%Vol.
There is a strong perfume of redcurrant, redberries, and its light bubles made it a delicate wine. Also ideal for parties!
